Vegetarian Dog Chowder Recipe

 

Preparation:

  1. Combine the potatoes and water in a small saucepan and bring to a boil over medium heat. Reduce the heat and cook the potatoes until tender, about 15 to 20 minutes. Drain potatoes, reserving cooking liquid and vegetable separately.
  2. Heat oil in a large saucepan over medium heat. Add the garlic and onion and sauté until onions are soft and translucent. Add corn and sauté 2 to 3 minutes longer. Stir in beans and reserved potato liquid and let it boil. Reduce the heat and simmer soup, covered, for 5 to 8 minutes, or until corn is tender.
  3. Purée the potatoes and milk in blender or food processor while the soup is cooking,. Add the puree to the soup and heat through. Add nutmeg and salt and pepper to taste. Serve it hot. You can make 6 quarts of soup with this recipe.

Ingredients:

  • 4 medium unpeeled potatoes cut into 1-inch cubes
  • 6 cups water
  • 4 tablespoons vegetable oil
  • 2 clove garlic, minced
  • 2 onions, coarsely chopped
  • 8 cups fresh or frozen corn kernels
  • 2 cups cooked kidney beans
  • 2 cups milk
  • 2 pinches of freshly grated nutmeg
  • Salt
  • Freshly ground black pepper

Note:
This recipe combines corn, which is an excellent source of vitamin A, and beans to provide protein-rich chowder that your dog will find just as delicious as a meat-based dish.
