Vegetable Pie with Potato Crust Dog Recipe

 

Preparation:

  1. Preheat oven to 400° F. and oil two 9-inch pie pans.
  2. To make the crust, place the potatoes in a saucepan with water to cover, boil, uncovered, 15 to 20 minutes, or until tender. Drain and mash the potatoes, adding the margarine and salt and pepper to taste. Spread the mashed potatoes evenly over the bottom and up the sides of the pie pans. Bake for 35 to 40 minutes, brushing crust with egg yolks after 15 minutes. When the crust is firm and golden brown, remove from the oven and cool.
  3. Reduce the oven temperature to 350° F.
  4. To make the filling, place the carrots, broccoli, and green beans in a steamer basket and steam, covered, over boiling water 7 to 8 minutes, or until tender. Add zucchini during last 4 minutes of cooking. Transfer the cooked vegetables to a mixing bowl. Add corn, oregano, thyme, and salt and pepper to taste, and toss well to mix. Turn the vegetable mixture into cooled pie crusts.
  5. Put cornstarch into a small bowl; stir in the stock, then the sherry. Pour this mixture over the vegetables and bake the pie for 25 minutes, or until very hot and sauce has thickened. You can make two 9-inch pies with this recipe.

Filling
5 cups of mixed vegetables or 1 cup of cubed carrots, 1 cup of cubed peeled broccoli stems, 1 cup of cubed zucchini, 1 cup of green beans cut into ½-inch lengths, and 1 cup of corn kernels.

  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • Salt
  • Freshly ground black pepper
  • 4 tablespoons cornstarch
  • 2 cups Chicken Stock
  • ½ cup sherry

Note:
This nutritious dish can be assembled from any vegetables you have on hand—all that is necessary is a good variety.

Collar Common Sense
Let your dog wear only one collar at a time. A choke chain, used for obedience training, should not be worn with any other collar and must be attached properly so that the chain hangs freely when not being used. To do this, be sure the loose end is threaded through the opposite end over the top of the dog's neck. This way the collar will always be in a relaxed position. The collar should fit appropriately, with a three- to four-inch slack.

If you buy a dog collar that is not adjustable, be sure it is not too tight. You should be able to slide two or three fingers underneath it.
