Tofu Egg Drop Soup Dog Recipe
Preparation: Boil the stock in a saucepan; add the tofu and reduce the heat. Add scallions, parsley, tamari, and the cornstarch mixture. Return soup to a boil, stir in the eggs, and let them boil just for a moment. You can make about 4 quarts of soup with this recipe.
Ingredients:
- 12 cups Chicken Stock
- 2 packages (32 ounces) firm tofu, drained, rinsed, and cut into 1-inch cubes
- 4 chopped scallions
- 4 tablespoons chopped Italian parsley
- 4 tablespoons tamari sauce
- 4 tablespoons cornstarch dissolved in 6 tablespoons cold water
- 2 beaten eggs
Note: Tofu is a remarkably good source of protein, supplying only slightly fewer grams per pound than chicken wings and backs. It is bland and easily edible.
