Tail – Wagger’s Eggs with Saffron Rice Dog Recipe

 

Preparation:

  1. Bring the rice and stock to a boil in a saucepan. Add saffron, cover pan, reduce heat to very low, and simmer rice 18 to 20 minutes, or until tender.
  2. Bring to a simmer enough water to cover eggs in another saucepan or a skillet, and then add vinegar. Break the eggs, one at a time, into a saucer and slide into simmering liquid. Poach the eggs for 5 minutes. On the meantime, place the cooked rice onto a plate with a spoon. Remove the eggs from the liquid with a slotted spoon and arrange over the rice. Pour curry sauce on top and serve. You can make about 6 cups eggs and rice with this recipe.

Ingredients:

  • 2 cups uncooked rice
  • 4 cups Chicken Stock or 2 cups water and 2 cups stock
  • Pinch of saffron threads
  • 2 tablespoons vinegar
  • 4 to 8 large eggs
  • ½ cup Canine Curry Sauce

Note:
