Steamed Mixed Vegetables with Herbed Butter Sauce Dog Recipe
Preparation:
Melt the butter over low heat in a small saucepan. Add tarragon, parsley, mustard, vinegar, and salt and pepper to taste. Stir until the mixture is heated, then let stand for at least 15 minutes for flavors to blend.
Make a large pot of water to boil. Add potatoes, which will cook a total of 20 minutes. After 7 minutes add cauliflower; after another 7 minutes add carrots, and 5 to 6 minutes before end of the cooking time add peas. When all the vegetables are tender, drain and move them to a towel. Reheat the butter sauce and pour it over the vegetables. You can make 10 to 12 cups of vegetables with this recipe.
Ingredients:
- 8 tablespoons (1 stick) unsalted butter
- 2 tablespoons chopped fresh tarragon
- 2 tablespoons chopped Italian parsley
- 2 teaspoons dry mustard
- 2 teaspoons wine vinegar
- Salt
- Freshly ground black pepper
- 4 potatoes cut into bite-size pieces
- 2 heads cauliflower, divided into florets
- 4 carrots cut into bite-size pieces
- 2 cups peas
- 2 onions cut into 1-inch dice
Note: Some dogs are very light eaters and prefer food that is plain and cleanly cooked. Others, who are inactive, will benefit from a sporadic vegetarian meal. These simple steamed vegetables with their spicy mustard sauce will provide a dish which is rich in carbohydrates and a extensive range of vitamins.
