Scottish Soup Dog Recipe
Preparation: Place the lamb and water into soup kettle and let it boil. Add barley and soy sauce; reduce heat and simmer soup, uncovered, for 45 minutes. Skim any scum from the surface. Add the onions, carrots, and celery and simmer 1 hour longer, adding cabbage for last 30 minutes of cooking. Serve in a deep bowl sprinkled with parsley. You can make 5 quarts of soup with this recipe.
Ingredients:
- 2 pounds boneless lamb, cut into 1-inch pieces
- 3 quarts water
- ½ cup whole-grain hulled or Scotch barley
- 2 tablespoons soy sauce
- 6 black peppercorns
- 2 chopped onions
- 4 coarsely chopped carrots
- 2 thinly sliced stalk celeries
- 1 shredded green cabbage
- 4 tablespoons chopped Italian parsley
Note: This is a hearty soup, appropriate for all dogs, but devised specially for Scottish terriers whose heritage no doubt inculcates a craving for lamb, barley, and cabbage. For the highest nutritional value, use either whole-grain hulled barley or Scotch barley. Pearl barley is the least nutritious form of the grain, losing three-quarters of its protein and nearly all of its fiber in the refining process.
