Preparation:

  1. Melt butter in a large skillet over medium heat. Add onions, carrot, bell pepper, potatoes, and corn, and sauté until onions is barely colored. Add 1 cup chicken stock, thyme, marjoram, and salt and pepper to taste; simmer vegetables for 20 minutes, stirring frequently. Stir chicken into vegetables and combine well.
  2. Preheat oven to 325° F.
  3. Roll out half the dough and line a 9-inch pie plate. Add chicken-vegetable mixture. Mix wine with cornstarch. Pour over chicken-vegetable mixture. Roll out remaining dough into a 10-inch round, place over top, and crimp edges. Cut a slit in center of crust. Place pie on a cookie sheet to catch the drippings and bake 45 minutes. Let cool before serving. You can make two 9-inch pie with this recipe.

Ingredients:

  • 4 tablespoons unsalted butter
  • 2 coarsely chopped onions
  • 2 carrots cut into ˝-inch pieces
  • 2 red bell peppers, cored, seeded, and cut into ˝-inch pieces
  • 6 medium unpeeled red potatoes cut into ˝-inch pieces
  • Kernels from 2 ears of com
  • 2 cups Chicken Stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • Salt
  • Freshly ground black pepper
  • 4 cups cut-up cooked boneless chicken (1-inch pieces)
  • 4 tablespoons white wine
  • 4 tablespoons cornstarch
  • 2 dough for double-crust 9-inch pie

Note:
This mild chicken pie is sure to calm even the most aggressive dog. If your dog is not likely to eat the whole pie in one sitting, cut it into individual slices and freeze it for future use.
