Saluki’s Sight - Saving Soup Dog Recipe
Preparation:
- Melt butter in a heavy saucepan over medium heat. Add onions and carrots and sauté stirring often, until onions are translucent. Add rice, potato, marjoram, thyme, oregano, pepper, salt, and broth. Add water, if necessary, to cover vegetables. Bring to a boil, reduce heat, and simmer soup, covered, 20 minutes, or until vegetables are tender.
- Purée soup in blender or food processing and return it to the saucepan. Add milk and heat slowly over moderate heat until very hot; do not let it boil. Serve soup over kibble and leftover cooked meat. You can make 3 quarts of soup with this recipe.

- 4 tablespoons unsalted butter

- 4 cups thickly sliced peeled carrots
- 1 cup uncooked rice
- 2 medium unpeeled potatoes, cut into ½-inch slices
- 2 pinches of dried marjoram
- 2 pinches of dried thyme
- 2 pinches of dried oregano
- 2 pinches freshly ground white pepper
- Salt
- 2 cups beef stock
- 2 cups milk
