Roast Stuffed Rabbit Dog Recipe
Preparation:
- Wash rabbits thoroughly and pat dry. Rub it well inside and out with cut sides of orange and sprinkle inside with salt and pepper to taste.
- Preheat oven to 350° F.
- Gently combine bread, onion, parsley, sage, salt and pepper to taste, and 4 tablespoons butter in a mixing bowl. Stuff rabbits with the mixture, then sew up the openings.
- Place the rabbits in a roasting pan, brush with the remaining melted butter, and roast, uncovered, for 3 hours, or until tender. Cut the rabbit meat from bone and serve with stuffing. You can make 8 medium servings with this recipe.

- 2 whole, cleaned rabbits
- 2 oranges cut in half
- Salt
- Freshly ground black pepper
- 4 cups dried bread cubes
- 4 tablespoons chopped onions
- 4 tablespoons chopped Italian parsley
- 2 teaspoons dried sage
- 8 tablespoons (1 stick) of melted, unsalted butter
