Roast Stuffed Rabbit Dog Recipe

 

Preparation:

  1. Wash rabbits thoroughly and pat dry. Rub it well inside and out with cut sides of orange and sprinkle inside with salt and pepper to taste.
  2. Preheat oven to 350° F.
  3. Gently combine bread, onion, parsley, sage, salt and pepper to taste, and 4 tablespoons butter in a mixing bowl. Stuff rabbits with the mixture, then sew up the openings.
  4. Place the rabbits in a roasting pan, brush with the remaining melted butter, and roast, uncovered, for 3 hours, or until tender. Cut the rabbit meat from bone and serve with stuffing. You can make 8 medium servings with this recipe.

Ingredients:

  • 2 whole, cleaned rabbits
  • 2 oranges cut in half
  • Salt
  • Freshly ground black pepper
  • 4 cups dried bread cubes
  • 4 tablespoons chopped onions
  • 4 tablespoons chopped Italian parsley
  • 2 teaspoons dried sage
  • 8 tablespoons (1 stick) of melted, unsalted butter
