Preparation:

  1. Bring rice and water to a boil over high heat in a small saucepan. Reduce heat and simmer rice, covered, 45 minutes, or until tender.
  2. Heat oil over medium heat in a skillet; add carrots and zucchini and stir-fry 2 to 3 minutes. Stir in scallion and cook 1 minute longer. Add beans, stock, and tamari to skillet and combine mixture well.
  3. Place the rice in dog bowl and spoon the bean mixture over it. Refrigerate leftovers which should be well covered; reheat beans and rice together. You can make 6 cups of rice and 2 quart beans with this recipe.

Ingredients:
2 cups of uncooked brown rice
5 cups of water
4 tablespoons of vegetable oil
2 chopped carrots
2 sliced zucchinis
2 chopped scallions
2 cups of Chicken Stock
2 cans (31 ounces) drained pink or kidney beans
1 tablespoon of tamari sauce

Note:
This is an ideal meal in itself, a good equilibrium of protein and compound carbohydrates, and so simple to prepare that you can easily cook it over a campfire.
