Poached Squid Soup Dog Recipe
Preparation:
- Clean the squid, or ask your fishmonger to do so when you purchase it; reserve the tentacles. Wash the squid well and cut into ½-inch slices.
- Boil stock in a soup kettle or large saucepan; toss in the squid and simmer for 25 minutes. Add the scallions, butter, and tamari, stirring until the butter is melted. Serve in a bowl with Rice Balls. You can make about 8 quarts of soup with this recipe.
Ingredients:
- 4 pounds of squid
- 2 quarts of fish stock
- 4 chopped scallions
- 4 tablespoons of unsalted butter or margarine
- 2 tablespoons of tamari sauce
- Rice Balls
