Liver Roll-Ups Dog Recipe
Preparation:
- To make the filling, chop livers fine in a food processor. Add the onions, cream, parsley, bread; crumbs, and salt and pepper to taste and process until the mixture is of spreadable uniformity.
- Preheat oven to 450° F. and oil a baking sheet.
- To make the dough, sift flour, baking powder, and salt into a mixing bowl. Cut in butter with 2 knives or a pastry blender. Stir in the milk to make soft dough on a lightly floured surface. roll out the dough into a 12-inch square. Spread liver paste over dough and roll up.
- Cut liver roll into 1-inch diagonal slices and place 1 inch apart on baking sheet. Bake for 10 to 15 minutes. You can make 20 to 24 roll-ups with this recipe.

- 2 cups diced cooked chicken livers or beef liver
- 2 small onions cut in half
- 1 cup heavy cream
- 4 tablespoons chopped Italian parsley
- 1 cup dry bread crumbs

Dough
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- Pinch of salt
- 4 tablespoons cold unsalted butter
- 1 cup cold milk
Note: Liver was a daily staple in the diet prepared by well-informed breeders for many years. Nowadays, some dog nutrition experts are concerned that liver on a daily basis may be harmful, due to toxic residues that accumulate in that organ. In moderation, nevertheless, liver is still an important basis of nutrients.
