Liver Lover’s Soup Dog Recipe
Preparation: Heat oil in a saucepan over medium heat. Add liver and sauté for 5 minutes, stir frequently. Add broth and salt and pepper to taste, and bring to a boil. Reduce heat and simmer soup, covered, 30 minutes. Stir in cream, which can be mixed with flour if you prefer a thicker soup, and heat through. Serve in a deep bowl over kibble or rice. You can make 4 quarts of soup with this recipe.
Ingredients:
- 2 tablespoons vegetable oil
- 2 pounds beef liver, trimmed of membrane and chopped very fine
- 3 quarts Basic Dog Broth
- Salt
- Freshly ground black pepper
- 2 cups heavy cream
- 2 to 3 tablespoons unbleached all-purpose flour (optional)
- 4 tablespoons chopped Italian parsley
- Kibble or steamed white or brown rice
Note: This creamy soup will give any dog a new lease on life. If your dog happens to be on a low-calorie diet, you can substitute plain low fat yogurt for the cream.
