Kidney Saver’s Pie Dog Recipe

 

Preparation:

  1. Preheat oven to 400° F.
  2. Heat the oil in a small skillet over moderate heat. Add the broccoli, oregano, thyme, and parsley; sauté for 4 or 5 minutes, until broccoli is just cooked. Transfer the broccoli to a mixing bowl. Add the rice, beef, and eggs and mix well. Scrape the mixture into the pie shells.
  3. Dissolve the cornstarch with a little stock in a small bowl, and then add the remaining stock to the bowl. Pour the mixture over the filling and bake the pie for 30 minutes. Let it cool before serving. You can make two 9-inch pies.

Ingredients:

  • 2 tablespoons of corn oil
  • 2 cups of broccoli florets, coarsely chopped 
  • 2 tablespoons of fresh oregano leaves
  • 2 teaspoons of fresh thyme leaves
  • 2 teaspoons of chopped Italian parsley
  • 4 cups of cooked rice
  • 1 cup of cooked ground beef
  • 2 hard-cooked eggs, coarsely chopped
  • 2 unbaked 9-inch pie shells
  • 4 tablespoons of cornstarch
  • 1 cup of Chicken Stock
