Firehouse Special Dog Recipe

 

Preparation:

Remove membranes from te kidneys, slit them in half lengthwise, and remove white core Cut kidneys into 1-inch pieces.

Mix flour and salt and pepper to taste. Dredge kidneys with seasoned flour. Heat oil in heavy skillet over medium heat; add kidney and garlic and sauté 4 to 5 minutes, stirring constantly.

Put kibble or rice in dog's bowl. Spoon kidneys on top, sprinkle with parsley, and spritz with lemon juice. You can make 4 cups of kidneys with this recipe.

  • 12 lamb kidneys
  • 1 cup all-purpose flour
  • Salt
  • Freshly ground black pepper
  • 4 tablespoons olive oil
  • 2 chopped cloves of garlic
  • Kibble or steamed rice
  • 2 tablespoons chopped parsley
  • Lemon wedge

Note:
The Dalmatian is the only breed in the world that as you would expect follows carriages, "coaching" under the axles. Its origins are thought to be in Dalmatia, but the breed's wide distribution is believed to result from its travel with the nomadic Romanies.

The Dalmatian was valued for its sporting good looks and, as a coaching dog, for its empathy for horses. With the decline of coaching in the eighteenth century, the Dalmatian found a new line of work at the firehouse, which perfectly matched its natural talents—a love of water, incredible stamina, and fleetness of foot.
