Eccentric Pudding Dog Recipe
Preparation:
- Mix the butter, sugar, egg whites, cottage cheese, 1 cup of milk, and vanilla in a mixing bowl; stir well with a wooden spoon. The mixture will be thick.
- Cut each slice of bread in half, place the pieces in a single layer in a shallow dish, and pour the remaining 3 cups milk over them. Allow bread to soak until saturated, for about 5 minutes.
- Preheat oven to 350° F. and butter two 13 x 9-inch baking dishes.
- Remove the bread from the milk, reserving the milk, and layer the pieces in the baking dishes alternately with the cottage cheese mixture, sprinkling each layer of cottage cheese with a few raisins.
- Beat the egg yolks. Add the milk reserved from soaking the bread and combine well. Pour the mixture over the bread and cheese, dust with nutmeg, and bake from 30 to 40 minutes. Serve warm. You can make 4 quarts of pudding with this recipe.

- 1 loaf of sliced white bread (about 20 slices)

- Freshly grated nutmeg
