Dog Days Wilted Salad Recipe
Preparation: Heat the oil in a skillet over medium heat; add the garlic and brown. Add the lettuce and stir-fry until limp. Add peas, meat, or fish bouillon mixture, and thyme; raise the heat and boil. Cook just until all the ingredients are heated through. Serve warm or cold, alone or over steamed rice or kibble. You can make 2 quarts of salad with this recipe.
Ingredients:
- 4 tablespoons olive oil
- 2 minced cloves of garlic
- 2 heads of Iceberg lettuce, cut into chunks
- 4 cups cooked fresh or frozen peas, snow peas, or chopped broccoli
- 2 cups bite-size pieces cooked lean meat or fish
- 2 beef bouillon cubes dissolved in 2 cups of hot water
- ½ teaspoon dried thyme
Note: The "dog days" of June through August received their name in ancient Egypt, when Sirius, the Dog Star, was visible for a forty-day period marked by stifling humidity and heat. The star itself was believed at that time to increase the heat of the sun, thus contributing to the sweltering temperatures, and dogs, so the superstition went, were susceptible to demonic possession, madness, and rabies during this phase.
