Canine Chili Dog Recipe
Preparation:
- Heat the vegetable oil over medium-high heat in a heavy skillet; add the ground beef and brown it, breaking it up into small pieces with a wooden spoon. Transfer meat to a large saucepan with a slotted spoon.
- Add the onions and bell peppers to skillet and sauté over medium heat until onions are translucent, about 5 minutes. Add onion mixture to beef along with beans, tomato sauce, and chicken stock; mix all well. Taste chili to see if salt or pepper is needed. Add chili powder, cumin, and cloves with moderation, tasting as you stir them in a little at a time. After seasonings are added, simmer the chili, covered, for 45 minutes.
- Serve chili over steamed rice or kibble. You can make 3 quarts of chili with this recipe.
Ingredients:
- 4 tablespoons vegetable oil
- 2 pounds of lean ground beef
- 2 chopped medium onions
- 2 chopped green bell peppers
- 2 cans (32 ounces) red kidney beans
- 2 cans (12 ounces) tomato sauce
- 2 cups Chicken Stock
- Salt
- Freshly ground black pepper
- 4 tablespoons chili powder
- 2 teaspoons ground cumin
- ˝ teaspoon ground cloves
- Steamed rice or kibble
Note: A mild chili that will call the attention of most dogs, and particularly the Mexican hairless, a dog whose ancestors were the main ingredient in South American soups preceding to the nineteenth century. Remember that dogs prefer blander fare than humans, so don't make their chili too spicy. You can buy in a supermarket the ordinary chili powder, used in the amount called for here, will be just spicy enough.
