Cabbage Rolls Dog Recipe
Preparation:
- Preheat oven to 350° F. grease a baking dish large enough to accommodate 20 cabbage rolls in one layer.
- Trim away the thick white vein at the base of cabbage leaves with a sharp paring knife. Boil a large pot of water, add the cabbage leaves, and simmer until tender enough to roll. Transfer leaves to paper towels and allow cooling.
- Mix chicken, rice, parsley, oregano, and salt and pepper to taste in a mixing bowl. Add enough yogurt to join the mixture and produce a creamy consistency.
- Spread out the cabbage leaves and place 4 tablespoons of the chicken mixture in the center of each leaf. Roll up the leaves, tucking in the sides, and arrange the cabbage rolls in a baking dish. Pour in enough stock to reach 1 inch up the sides of the dish, then sprinkle them with cheese. Cover and bake for 30 minutes. Serve warm. You can make 20 cabbage rolls with this recipe.
Ingredients:
- 20 large cabbage leaves
- 2 cups shredded cooked chicken
- 2 cups cooked rice
- 2 teaspoons chopped Italian parsley
- 1 teaspoon dried oregano
- Salt
- Freshly ground black pepper
- 1 cup plain low fat yogurt
- 1 to 2 cups Chicken Stock
- 1 cup grated Cheddar cheese
Note: Cabbage is rich in vitamin C and provides fiber for the dieting dog. The well-balanced filling here is a meal in itself. For smaller dogs, freeze special portions to serve with soup at another time.
