Broiled Halibut Dog Recipe
Preparation:
- Preheat broiler. Wash the fish and inspect for and remove any bones. Place the fish on the broiler rack, baste with olive oil and lemon juice, and broil until cooked, turning and basting the fish once and allowing 10 minutes per inch of thickness.
- Warm the tomato purée in a small saucepan over low heat while fish is cooking. Transfer the halibut to dog dish, pour sauce over it, and dust top with coriander. You can make about 2 quarts of fish and sauce with this recipe.
Ingredients:
- 4 pounds of boneless halibut steaks
- ½ cup of olive oil
- Juice of 2 lemons
- 2 cups of fresh or canned, salt-free tomato purée
- 4 tablespoons of chopped fresh coriander (cilantro) Steamed rice
Note: If your budget permits halibut steaks, your dog will experience canine ecstasy as he consumes this dish delicately seasoned with cilantro.
