Blue Ribbon Blintzes Dog Recipe
Preparation:
- To make the filling, place the cheese, eggs, flour, and salt in a mixing bowl and beat until well blended. Reserve.
- To make the crepes, place the flour, eggs, milk, butter, and salt in a blender or food processor container and process until the batter is smooth. Pour the batter into 1-quart measuring cup.
- Heat a 15 - to 16-inch skillet or omelet pan over medium heat and brush lightly with butter. Pour in one-eighth of the batter and tilt the pan quickly so batter covers the entire bottom. Cook until the edges of crepes begin to curl up. The bottom should be golden brown and the top should be covered with fine bubbles. Place the crepe, cooked side down, on a clean towel. Keep making crepes until the batter is used up. The crepes may be layered between sheets of wax paper until you are ready to fill them.
- To fill them, turn the crepes cooked sides up. Put an abundant tablespoon of filling on the lower third of each pancake and roll them up. Heat 4 tablespoons of butter in a heavy skillet over moderate heat, add the blintzes, and brown on all sides. Serve at once. You can make 16 blintzes with this recipe.
